Hei Cha
A delicacy in every sense of the word, Hei Cha (Dark Tea) is a rich post-fermented tea produced and enjoyed predominantly throughout Southeast China. It uses microbial and fungal processes to alter the taste of the leaves and is then frequently aged to brothy perfection.
Xiao Qing Gan
Beijing Village, where our Xiao Qing Gan is produced, has one of the better reputations for quality among the already renowned Xinhui District. I find that Meijiang Tangerines are less frequently used in Xiao Qing Gan production because the price can be almost twice as high as other renowned varieties, such as those from Tianma. Nevertheless, I feel the burst of clean flavor that comes with Meijiang peels is worth the investment.
These Xiao Qing Gan have been sun-dried and were produced in 2018. They come from 10-year-old trees.
