Originating in the Ming dynasty, it is usually made from porcelain and is favored for appreciating the aromas of tea. It allows for precise control of infusion time and subsequent observation of how the leaves unfold, with multiple concentrated infusions revealing the various facets of flavor and aroma.
Gaiwans are the quintessential tool for Gong Fu brewing, a method commonly used in Mainland Chinese and Taiwanese tea preparation. It uses a higher ratio of tea leaves to water and involves short and successive steepings.
