From Cliff to Cup
Golden Cassia is a Rou Gui, one of those delightful Yan Cha (cliff teas) that enjoy a fragrant roast and rich presence. This one interested me with its highly oxidized leaves, atypical for a Rou Gui, leaving it a “Hong-ified” note that brushes the palate with a touch of sweetness. The material is Rou Gui, commonly translated as cinnamon or cassia, and recognizably so; pay careful attention to  the subtle and woodsy transformations your cup undergoes Â
